A practical book that identifies the important steps to prepare for your first job after graduation (whether you are pursuing an undergraduate or a graduate degree) is Landing Your First Job: A Guide for Physics Students by John S. Rigden, published by the Career Services Division of the American Institute of Physics. The Physics and Astronomy Department owns a copy which you may borrow (sign it out from the main department office), or you may purchase a copy yourself from AIP.

The website for the Chronicle of Higher Education has a whole section entitled "beyond academia". It includes sections like "transferring your skills to the real world" and "deprogramming from the academic cult".

The book To Boldly Go: A Practical Career Guide for Scientists by Peter Fiske has good advice on everything from figuring out your options to writing appropriate resumes and cover letters. This should be in every University Career Center, and if it's not in yours, make them buy it.

The book Alternative Careers in Science: Leaving the Ivory Tower edited by Cynthia Robbins-Ross, is made up of chapters written by scientists who have pursued careers outside of academia. They include people in technical writing and science journalism, investment analysts and bankers, business entrepreneurs, patent agents and technology transfer experts, public policy analysts, and others. Some of the authors have physics degrees, though most are molecular biologists. The information given is broadly applicable, however.
